Blueberry Paleo Pancake Muffins

 

Ingredients

3 eggs (medium to large)

2 mashed bananas (medium)

1/4 – 1/2 cup coconut flour

2 tsp hemp seeds (optional)

Handful of Blueberries 

Method

  1. Whisk eggs
  2. Mash banana into a liquid and then mix in with the eggs
  3. Add the coconut flour slowly and mix until you’re happy with the consistency. Approximately 1/4 – 1/2 cup depending on how much wet ingredients you’ve made with banana and eggs 
  4. Spoon into muffin cups
  5. Drop in 3 blueberries to each muffin sprinkle some hemp seeds on top. 
  6. Bake 350F, 180C, gas mark 4 for 18-20 minutes. 
  7. Voila!

Makes about 8 muffins and takes minutes to prepare.

As a nutritionist specialising in baby, child and family health, I work with many kids who are on a gut healing programme. The reasons why young children might need to be on a gut healing programme can vary, some might have had multiple courses of antibiotics as a baby, some might allergies or intolerances to certain foods and others might have an autoimmune condition. This is why this recipe is gluten free, or labelled ‘paleo’ because I use coconut flour which is more digested because it doesn’t contain harsh starches and/or fibres that can irritate an inflamed gut. If you choose to replace the coconut flour with regular flour, that’s totally fine, just be prepared to double or triple the amount of flour required because coconut flour is quite dense which is why the recipe only calls for a small amount.
